Mom’s First Carrot Cake: Mission (Partially) Accomplished
Last week, I went to the kitchen and tested my luck at making a whole cake. It was another one of Luvita Ho’s recipes; a cake I’ve always had a soft spot for. Apart from it being a personal favorite, another reason why I chose this recipe was a comment from my mom a couple of months ago: “I’ve never tried carrot cake before.”
With the deepest hope that my carrot cake would turn out well (or at least be edible), I baked it for my mom to try. As expected, she didn’t like it that much. “The frosting is too cheesy,” she said. Well, the frosting was indeed cheesy, but I liked it.
In conclusion: will I bake it again? Yes! Carrot cake is super easy to make. I will opt for better cream cheese and butter for the frosting, though.
P.S.: Also, I know, I know, I need to work on my frosting technique. It’s a mess, haha.
